Country Bean Soup W/ Sausage and Cabbage
- 1 lb lima beans, cleaned and drained
- 2 tablespoons olive oil
- 4 large garlic cloves, minced
- 1 large onion, coarsely chopped
- 2 large carrots, coarsely chopped
- 1 12 teaspoons dried thyme
- 1 teaspoon dried rosemary, crumbled
- 5 cups chicken stock or 5 cups vegetable broth
- 4 cups water
- 4 cups coarsely chopped cabbage
- 1 lb smoked sausage, quartered lengthwise and sliced
- 1 baking potato, peeled and cut into 1 inch cubes
- 12 cup shell macaroni
- salt and pepper
- In a wide 8 quart pot or dutch oven, heat 2 tbls.
- oil until hot.
- Stir in garlic, onions, carrots, thyme and rosemary.
- Saute until vegetables soften, about 10 minutes.
- Stir in broth, 4 cups water, cabbage, lima beans, and sausage.
- Bring to a boil, reduce heat and simmer , partially covered, for 45-55 minutes or until beans are tender.
- Stir in potato and macaroni.
- Simmer uncovered for 10-15 minuted or until cooked through.
- Season to taste.
