Feta & Olive Pasta Salad
- 2 tsp. extra virgin olive oil
- 2 tsp. balsamic vinegar
- 2 oz. ATHENOS Crumbled Reduced Fat Feta Cheese
- 1/4 cup chopped green onion
- 2 large black olives, chopped
- 5 cherry tomatoes, sliced in half
- 2 oz. rotini pasta, uncooked
- 10 baby carrots
- 1 kiwi, peeled and sliced
- 1 On-the-Go packet
- 1 bottle of water, 20 fl oz
- Mix oil, vinegar, and feta cheese in a small bowl.
- Add chopped onions, olives and tomatoes; set aside.
- Cook pasta according to package instructions.
- Drain but do not rinse.
- Toss hot pasta with olive oil-cheese sauce.
- Enjoy baby carrots and a fresh kiwi on the side.
- COMBINE CRYSTAL LIGHT On-the-GO packet with bottled water per package directions.
