Amatriciana Sauce Recipe
- 1/3 c. extra virgin olive oil
- 4 x onions, coarsely minced
- 8 ounce Canadian bacon, sliced, cut into 3/4" square Or possibly sliced smoked ham
- 4 x cloves garlic, crushed
- 2 can , large plum tomatoes , in juice, 35 ounce. each can (4 c. tomatoes)
- 2 tsp sugar
- 3/4 c. dry red wine salt and freshly grnd black pepper, to taste
- Heat oil in a medium size heavy saucepan over medium-high heat.
- Add in the onions, and sauteefor 10 min.
- Stir in the bacon and garlic, and sauteefor 5 min more.
- Stir in the tomatoes, sugar and wine.
- Season to taste with salt and pepper.
- Simmer, uncovered, for 45 min, stirring occasionally.
