Fresh Ginger and Citrus Sorbet

  1. Combine 5 cups water, sugar and ginger in heavy large saucepan.
  2. Bring to boil, stirring until sugar dissolves.
  3. Reduce heat and simmer 10 minutes.
  4. Strain liquid into large bowl; discard solids.
  5. Return liquid to same saucepan.
  6. Add lemon and lime peels.
  7. Boil 2 minutes.
  8. Remove from heat.
  9. Whisk in lemon and lime juices.
  10. Cool completely.
  11. Pour mixture into 13x9x2-inch glass baking dish.
  12. Cover and freeze until solid, about 6 hours or overnight.
  13. Transfer mixture to processor and puree until smooth.
  14. Return to same glass dish; cover and freeze until solid, at least 3 hours or overnight.
  15. (Can be prepared 3 days ahead.
  16. Keep frozen.)
  17. Scoop sorbet into glasses or bowls.
  18. Garnish with mint.
