Celery Soup With Creme Fraiche

  1. In a large pot over medium heat, heat oil, onion, and a pinch of salt until onion softens, about 6 minutes.
  2. Add celery root, garlic, and another pinch of salt and cook for 5 minutes.
  3. Using kitchen twine, tie bay leaf, thyme, and parsley together.
  4. Add to pot with 6 cups water, a pinch of salt, and celery ribs.
  5. Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes.
  6. Remove from heat and let rest for 10 minutes.
  7. In a blender, puree.
  8. Serve soup hot with a dollop of creme fraiche and a sprig of chervil.
