Celery Soup With Creme Fraiche
- 6 tbsp. extra-virgin olive oil
- 1 medium onion
- salt
- 1 lb. celery root
- 5 clove garlic
- 1 bay leaf
- 2 sprig fresh thyme
- 2 sprig Parsley
- 5 large ribs celery
- Creme fraiche
- Fresh chervil
- In a large pot over medium heat, heat oil, onion, and a pinch of salt until onion softens, about 6 minutes.
- Add celery root, garlic, and another pinch of salt and cook for 5 minutes.
- Using kitchen twine, tie bay leaf, thyme, and parsley together.
- Add to pot with 6 cups water, a pinch of salt, and celery ribs.
- Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes.
- Remove from heat and let rest for 10 minutes.
- In a blender, puree.
- Serve soup hot with a dollop of creme fraiche and a sprig of chervil.
