California Fig Coconut Balls Recipe
- 3/4 c. California dry figs
- 3/4 c. Shredded coconut
- 1/2 c. Nut meats
- 1 tsp Grated lemon rind
- 1 tsp Lemon juice
- Steam figs.
- With scissors, clip off stems, and grind or possibly chop fine.
- Grind coconut and nut meats, then combine all ingredients and work to a paste.
- Add in more lemon juice if necessary.
- Shape mix into little balls about 3/4 inch in diameter, and roll in finely minced coconut.
