Weight Watchers Pumpkin Muffins Recipe
- 16 ounce. pumpkin or possibly applesauce
- 4 med. Large eggs
- 1 teaspoon vanilla extract
- Artifical sweetener = 2 tbsp. sugar
- Artifical brown sugar = 6 tbsp. brown sugar
- 4 ounce. white bread
- 1 1/3 c. non-fat dry lowfat milk
- 1 1/2 teaspoon cinnamon
- 1 1/3 teaspoon baking soda
- Mix Large eggs, baking soda, pumpkin and vanilla.
- Put rest of ingredients in separate bowl.
- Add in dry ingredients to other (little at a time).
- Beat on low speed with mixer.
- Bake at 350 degrees for 30 min.
- Makes 12.
