Crunchy Fish Cakes with Herbed Wedges

  1. Melt the butter and saute the onion and capsicum for 3-5 minutes.
  2. Allow to cool then stir in the mince, tartare sauce, breadcrumbs, chives, flour, paprika and garlic mix well.
  3. Form the mixture into 4 fish patties, toss in extra flour to coat, and refrigerate until firm.
  4. Place the wedges onto an oven tray and spray with the oil, sprinkle liberally with the herbs and bake in a hot oven 200C for 30 40 minutes or until crisp and golden.
  5. Heat a little oil in frypan and cook the patties until golden and cooked through, drain.
  6. Serve the patties with the wedges, a dollop of tartare sauce and a slice of lemon.
  7. Serve immediately.
