Crunchy Fish Cakes with Herbed Wedges
- 30g butter
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 red capsicum, finely chopped
- 400g white fish, minced Walmart Supercenter 1 lb For $5.00 thru 02/14
- 1/3 cup KRAFT* Tartare Sauce
- 1 3/4 cups fresh breadcrumbs
- 2 tablespoons chopped chives
- 1/2 cup plain flour
- 1/2 teaspoon paprika
- 1 teaspoon garlic powder
- extra flour, for coating
- oil for shallow frying
- 6 medium new potatoes, cut into wedges King Sooper's 5 lb For $1.88 thru 02/09
- olive oil spray
- herbs to sprinkle eg. oregano or rosemary
- Melt the butter and saute the onion and capsicum for 3-5 minutes.
- Allow to cool then stir in the mince, tartare sauce, breadcrumbs, chives, flour, paprika and garlic mix well.
- Form the mixture into 4 fish patties, toss in extra flour to coat, and refrigerate until firm.
- Place the wedges onto an oven tray and spray with the oil, sprinkle liberally with the herbs and bake in a hot oven 200C for 30 40 minutes or until crisp and golden.
- Heat a little oil in frypan and cook the patties until golden and cooked through, drain.
- Serve the patties with the wedges, a dollop of tartare sauce and a slice of lemon.
- Serve immediately.
