Grilled Shrimp Tortilla Sandwiches

  1. Pour 3/4 cup of the dressing over shrimp; cover.
  2. Refrigerate 1 hour to marinate.
  3. Preheat greased grill to medium heat.
  4. Drain shrimp; discard marinade.
  5. Thread shrimp onto skewers.
  6. Grill 2 to 3 min.
  7. on each side or until shrimp turn pink.
  8. Remove shrimp from skewers.
  9. Reduce grill to low heat.
  10. Chop shrimp; place in medium bowl.
  11. Add corn, red pepper, cheese, cilantro and remaining 1/4 cup dressing; mix lightly.
  12. Spoon evenly onto 10 of the tortillas; cover each with second tortilla.
  13. Return to grill.
  14. Cook 2 to 3 min.
  15. or until tortillas are golden brown on both sides and cheese is melted, turning after 1 min.
