Jerk Chicken on Black Sesame Crackers with Caramelized-Pineapple Relish

  1. Process onions, dressing, lime juice, soy sauce, chiles, garlic and seasonings in food processor until well blended.
  2. Pour over chicken in non-reactive pan; turn to coat both sides of each piece.
  3. Refrigerate at least 6 hours or up to 24 hours to marinate.
  4. Remove chicken from marinade; discard marinade.
  5. Grill chicken on medium heat until done (170 degrees F), turning occasionally.
  6. Remove skin and bones from chicken; discard.
  7. Shred meat.
  8. Refrigerate until ready to use.
  9. Caramelized-Pineapple Relish: Heat large skillet on medium-high heat.
  10. Add sugar and lemon juice; cook and stir 1 to 2 min.
  11. or until sugar is completely melted and golden brown.
  12. Add pineapple; cook and stir 4 to 5 min.
  13. or until tender.
  14. Use slotted spoon to transfer pineapple from skillet to bowl.
  15. Cook liquid remaining in skillet until reduced to about 1/2 cup (125 mL) or to about 1/4 cup (50 mL) for trial recipe.
  16. Pour over pineapple; mix lightly.
  17. Refrigerate until ready to use.
  18. For each serving: Spoon about 1 Tbsp.
  19. (15 mL) Caramelized-Pineapple Relish onto each of 2 Black Sesame Crackers; top each with about 3/4 oz.
  20. (20 g) chicken.
