Zucchini Salad
- 12 cup oil
- 2 tablespoons wine vinegar
- 1 small garlic clove, minced
- 12 teaspoon salt
- 18 teaspoon fresh ground pepper
- 3 medium zucchini, sliced very thin
- 14 cup thinly sliced green onions with top
- lettuce cup
- Mix oil, vinegar, garlic, salt and pepper in a small bowl.
- Pour over zucchini and onions and toss.
- Cover and chill 1 hour or longer.
- Serve in lettuce cups, spooning on any remaining dressing.
