Curried Split Pea Soup Recipe
- 1 c. green split peas
- 3 c. water
- 1 sm. yellow onion
- 2 teaspoon oil
- 1 lg. carrot
- 2 celery ribs
- 1-2 c. additional water
- Curry blend
- 1/2 teaspoon curry
- 1 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 teaspoon ginger
- 1/4 teaspoon cinnamon
- 3/4 teaspoon salt
- 1 tbsp. oil
- Saute/fry onion, carrot, celery in oil.
- When limp, add in to split pea mix.
- Cook the water, peas, and vegetables over low heat till soft and desired thickness.
- Heat the 1 tsp.
- oil in a small fry pan, when warm add in the spices and cook briefly, till they give off aroma.
- Add in to the above mix.
- Serves 4 to 6.
