Lemon Crumb Bars

  1. Preheat oven to 350F Grease 15x10x1-inch baking pan., In a large mixing bowl, combine cake mix, butter and 1 egg; mix well.
  2. (Mixture will be crmbly.)
  3. Stir in cracker crumbs.
  4. Reserve 2 cups crumb mixture.
  5. Press remaining crumb mixture firmly on bottom of prepared pan.
  6. Bake 15 minutes.
  7. Meanwhile, in medium mixing bowl, combine egg yolks, Eagle Brand and lemon juice; mix well.
  8. Spread evenly over baked crust.
  9. Top with reserved crumb mixture.
  10. Bake 20 minutes or until firm.
  11. Cool cut into bars.
  12. Store in refrigerator.
