Apricot-Glazed Green Beans

  1. Bring a large pot of water to a boil.
  2. Add 1 tablespoon salt, then the green beans, and cook until just tender, 3 to 4 minutes.
  3. Drain and run under cold water to cool.
  4. Meanwhile, cook the bacon in a medium skillet over medium heat until crisp, 6 to 8 minutes; transfer to a paper towellined plate.
  5. Let cool, then break into pieces.
  6. Wipe out the skillet and heat the oil over medium heat.
  7. Add the garlic and cook, stirring occasionally, until the garlic begins to brown, about 2 minutes.
  8. Stir in the jam, vinegar, and 1/4 teaspoon each salt and pepper.
  9. Add the green beans and toss to coat.
  10. Fold in the bacon.
