Pwdin Watcyn Wynne (Welsh Watkin Wine Pudding)

• 8 ounces breadcrumbs
• 4 ounces chopped suet
• 2 ounces sugar
• 4 ounces currants
• 1 ounce lemon zest or 1 ounce orange zest
• 1 egg
• 2 quarts milk

1. Mix the dry ingredients.
2. Beat the egg and add to the milk.
3. Combine the milk mix with the dry ingredients.
4. Cover and boil for 3 hours.
5. Serve with Madeira Sauce poured over the pudding.
