GF Fudgy Fiesta Brownies
- 1/2 cups GF Oat Flour
- 13 cups Bob's Red Mill Pancake Mix (or Any Pancake Mix)
- 13 cups Cocoa
- 13 cups Raw Sugar
- 1 Tablespoon Flax Meal
- 1 Tablespoon Almond Meal
- 1 Tablespoon Vanilla
- 13 cups Agave Syrup
- 2 whole Large Eggs
- 2 Tablespoons Coconut Oil
- 1 cup Vegetarian Refried Beans
- In a large bowl, mix all dry ingredients well (flour, pancake mix, cocoa, sugar, flax meal, almond meal).
- Then add agave, vanilla, eggs, coconut oil and refried beans.
- Mix well and pour batter into a greased 9-inch square or round cake pan.
- Bake between 20 to 25 minutes at 350 degrees F till an inserted knife or toothpick comes out clean.
- Notes: I have served these brownies iced or plain and they are delicious either way.
- I have used seasoned refried beans (gives brownies a zippy flavor) but prefer to use the vegetarian no fat, no seasoning variety.
