Macaroon Cookie Bars Recipe
- 1 pkg. chocolate cake mix
- 1/2 c. butter, softened
- 1 egg
- 14 ounce. can sweetened condensed lowfat milk
- 1 teaspoon vanilla
- 1 egg
- 1 1/4 c. coconut
- 1 c. minced nuts
- Heat oven to 350 degrees.
- Grease a 13x9-inch pan.
- In a large mixing bowl combine the cake mix, softened butter and 1 egg.
- Mix at low speed till well combined.
- Mix will be crumbly.
- Press proportionately into the bottom of the greased pan.
- In a smaller bowl, combine the condensed lowfat milk, vanilla and egg and beat till smooth.
- Stir in 1 c. of the coconut and the nuts; pour mix over crust.
- Sprinkle remaining 1/4 c. coconut over top.
- Bake at 350 degrees for 30-35 min or possibly till golden.
- Cold completely.
- Cut into bars.
- Yield: 36 bars.
