Curry tofu salad
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup sweet relish
- 1/2 cup raisins
- 1/2 cup vegenaise
- 1/2 cup almond slivers
- 1 tbsp curry powder
- Drain tofu, wrap in paper towel or clean rag.
- Press to remove water, without crumbling tofu brick.
- Prep and combine all ingredients.
- Add curry slowly to taste.
- Not all curry powders have the same kick.
- May be more or less than 1 tbsp.
- Add more mayo and curry as necessary to taste.
- More mayo for creamier consistency, curry for kick.
