Millet Muffins With Honey Pecan Butter
- 23 cup millet
- 34 cup brown sugar
- 1 egg
- 1 cup buttermilk
- 14 cup melted butter
- 1 12 cups flour
- 1 teaspoon baking powder
- 14 teaspoon baking soda
- 14 teaspoon salt
- 2 tablespoons butter, softened
- 2 tablespoons finely chopped toasted pecans
- 1 tablespoon honey
- Preheat oven to 375 degrees.
- Coarsely grind millet in food processor or coffee grinder; set aside.
- Add brown sugar and egg to a large bowl.
- Whisk until well combined.
- Stir in millet, milk, and butter.
- In another bowl, combine flour, baking powder, baking soda, and salt.
- Make a well in the center and add the wet ingredients.
- Stir just until moistened.
- Spoon into muffin tins coated with cooking spray.
- Bake for 18 minutes or until lightly browned.
- Combine the butter, pecans, and honey in a small bowl.
- Serve with the muffins.
