Island Burgers
- 2 tbsp. canola oil
- 1 lb. ground turkey
- 2 tsp. jerk seasoning
- 3 finely chopped green onions
- 1/2 tsp. salt
- 1/2 c. plain Greek yogurt
- 2 chopped green onions
- 1 mango
- 4 toasted buns
- Heat canola oil in 12-inch skillet on medium-high.
- Meanwhile, in large bowl, mix ground turkey, jerk seasoning, 3 finely chopped green onions, and 1/2 teaspoon salt; form into 1/2-inch-thick patties.
- Cook 10 minutes, turning over once, or just until cooked through (165 degrees F).
- Meanwhile, in small bowl, mix plain Greek yogurt, 2 chopped green onions, and chopped mango.
- Serve burgers on 4 toasted buns with Bibb lettuce and mango-yogurt sauce.
