MA PO TOFU
- 2 blocks of tofu (12 oz. each)
- 4 oz ground pork
- 1 tsp garlic, minced
- 1 tbsp hot bean sauce
- 1 tsp peppercorn power
- 2 tbsp soy sauce
- 1 tsp salt
- 2/3 cup stock
- 1 tsp sesame oil
- 3 cup vegetable oil for deep-frying
- 2 tsp cornstarch, mixed with 2 tsp. water
- Cut tofu into 1/2 inch cubes; deep fry in vegetable oil for 1/2 minute.
- Remove all oil except 3 tablespoons.
- Stir-fry ground pork well.
- Add garlic, hot bean paste, soy sauce, salt, soup stock and tofu.
- Boil for 3 minutes.
- Thicken with cornstarch paste
- sprinkle with sesame oil.
- Place in bowl and sprinkle with peppercorn powder.
