Green Curry Tofu

  1. Spread 1 Tbsp.
  2. curry paste evenly onto both sides of tofu slices.
  3. Heat oil in large skillet on medium heat.
  4. Add tofu; cook 4 min.
  5. on each side.
  6. Remove from heat; keep warm.
  7. Mix cream cheese, coconut milk, water and remaining curry paste until well blended.
  8. Add peppers and onions to skillet; cook 5 min., stirring occasionally.
  9. Stir in cream cheese sauce; simmer on medium-low heat 3 min., stirring constantly.
  10. Stir in cilantro.
  11. Serve rice topped with tofu and vegetables.
