Bbq Chicken Cornbread Casserole
- 2 lb Chicken
- 1 Bbq Sauce (whatever you like. my memphis sauce goes great)
- 1 can Corn (drained)
- 2 cup Mexican Blend Cheese (divided)
- 2 cup Chicken Broth
- 2 Pouches Corn Bread Mix
- Preheat Oven to 350F.
- Boil chicken in broth until tender enough shred.
- Drain then shred chicken and mix with bbq sauce to taste.
- Mix cornbread batter as directed on package then mix in can of corn and 1 cup of cheese.
- Grease 9in Round baking Dish.
- Pour in cornbread batter.
- Top With chicken mixture and spread to cover.
- Bake for 30 minutes or until toothpick comes out clean.
- top with 1 cup of cheese and bake for an additional 10 minutes.
- Let sit 5 minutes.
- Serve and enjoy.
