The Taste of Autumn! Dense and Delightful Sweet Potato Gratin

  1. Cut the sweet potato lengthwise in half, wrap in plastic wrap, then microwave for 5 minutes at 600W.
  2. Scoop the inside with a spoon and mash with soy milk.
  3. Heat olive oil in a frying pan, saute the onion and minced meat, add the sweet potato from Step 2, add ingredients and lightly saute until the texture becomes slightly heavy.
  4. Stuff the potato skin with the mixture from Step 3, top with pizza cheese, then bake until crisp in a toaster oven and serve.
