The Taste of Autumn! Dense and Delightful Sweet Potato Gratin
- 1 Sweet potato
- 1/2 Onions, finely chopped
- 30 grams Bacon, minced
- 100 ml Plain soy milk
- 1 Salt and white pepper
- 1 tbsp Parmesan cheese
- 1 Olive oil
- 1 Pizza cheese
- Cut the sweet potato lengthwise in half, wrap in plastic wrap, then microwave for 5 minutes at 600W.
- Scoop the inside with a spoon and mash with soy milk.
- Heat olive oil in a frying pan, saute the onion and minced meat, add the sweet potato from Step 2, add ingredients and lightly saute until the texture becomes slightly heavy.
- Stuff the potato skin with the mixture from Step 3, top with pizza cheese, then bake until crisp in a toaster oven and serve.
