The Martine Inn Zucchini Cookies
- 1 cup sugar
- 12 cup butter (no substitutions)
- 1 egg, beaten
- 1 cup zucchini or 1 cup summer squash, grated
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 12 teaspoon salt
- 12 teaspoon clove
- 1 cup raisins
- 1 cup walnuts, chopped
- Preheat oven to 375F and lightly grease cookie sheets.
- In a large bowl, combine sugar and butter; beat well until fluffy.
- Add egg and beat well.
- Stir in zucchini.
- In another bowl, sift dry ingredients together.
- Add to butter mixture and blend well.
- Stir in raisins and nuts.
- Drop by teaspoonful onto prepared baking sheet about 2" apart.
- Bake for 10 to 12 minutes or until golden brown.
- Remove to a cooling rack.
- When cool, store in a tightly covered container.
