Cheesy Mexican Green Rice
- 2 cups chicken broth, divided
- 2 cloves garlic, minced
- 1 cup fresh parsley
- 1/2 cup fresh cilantro
- 1 cup long-grain white rice, uncooked
- 1/4 cup KRAFT Zesty Italian Dressing
- 1/4 cup KRAFT Shredded Cheddar Cheese
- Place 1 cup of the broth, garlic, parsley and cilantro in blender container; cover.
- Blend until smooth.
- Set aside.
- Cook rice in dressing in large skillet on medium heat 3 min.
- until rice is coated.
- Add broth mixture to skillet.
- Stir until liquid is absorbed.
- Stir in remaining 1 cup broth.
- Bring to boil.
- Reduce heat to low; cover.
- Simmer 15 min.
- or until liquid is absorbed.
- Spoon into serving dish.
- Sprinkle with cheese just before serving.
