Cheesy Mexican Green Rice

  1. Place 1 cup of the broth, garlic, parsley and cilantro in blender container; cover.
  2. Blend until smooth.
  3. Set aside.
  4. Cook rice in dressing in large skillet on medium heat 3 min.
  5. until rice is coated.
  6. Add broth mixture to skillet.
  7. Stir until liquid is absorbed.
  8. Stir in remaining 1 cup broth.
  9. Bring to boil.
  10. Reduce heat to low; cover.
  11. Simmer 15 min.
  12. or until liquid is absorbed.
  13. Spoon into serving dish.
  14. Sprinkle with cheese just before serving.
