Pork with Crispy Kale
- 2 clove garlic
- 4 sprig rosemary
- 1/4 c. prepared horseradish sauce
- 1 pork tenderloin
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 12 c. kale leaves
- 2 tbsp. olive oil
- 1/4 tsp. salt
- In food processor, pulse garlic cloves with leaves from the rosemary sprigs until finely chopped; stir into prepared horseradish sauce.
- Season pork tenderloin with 1/4 teaspoon each salt and pepper; coat with horseradish mixture.
- On foil-lined rimmed baking sheet, roast pork at 450 degrees F for 10 minutes.
- Meanwhile, toss kale olive oil and 1/4 teaspoons salt.
- Remove sheet from oven; sprinkle kale around pork on sheet and roast 15 to 17 minutes, or until kale is crispy and pork is cooked through.
