Spinach Gnocchi

  1. Thaw spinach in microwave according to package directions.
  2. Chop mushrooms and saute lightly in a little butter.
  3. Process spinach, mushrooms, cheese, and egg in a food processor until well blended.
  4. Add bread crumbs slowly until well incorporated.
  5. Make into small balls about 1- 1 1/4 inch diameter and roll in flour.
  6. Place in boiling water and cook until they float.
  7. Remove, drain, and place in a heated bowl.
  8. Melt butter with a pinch of each of the herbs, and pour over cooked gnocchi.
  9. Serve immediately.
