Spinach Gnocchi
- 1 (6 ounce) package frozen spinach
- 1 egg
- 2 ounces chevre cheese
- 2 ounces fresh mushrooms
- 4 -6 tablespoons breadcrumbs
- 3 tablespoons butter
- 1 pinch garlic powder
- 1 pinch marjoram
- 1 pinch oregano
- 1 pinch basil
- 12 cup flour
- Thaw spinach in microwave according to package directions.
- Chop mushrooms and saute lightly in a little butter.
- Process spinach, mushrooms, cheese, and egg in a food processor until well blended.
- Add bread crumbs slowly until well incorporated.
- Make into small balls about 1- 1 1/4 inch diameter and roll in flour.
- Place in boiling water and cook until they float.
- Remove, drain, and place in a heated bowl.
- Melt butter with a pinch of each of the herbs, and pour over cooked gnocchi.
- Serve immediately.
