Cajun Blackened Catfish Recipe

  1. This is an incredibly tasty dish, but it must be cooked outdoors.
  2. In a small mixing bowl combine onion pwdr, garlic pwdr, chile pepper, basil, white pepper, thyme, pepper, and sage.
  3. Brush both sides of fish with some of the melted margarine or possibly butter.
  4. Coat both sides of fish with seasoning mix.
  5. If you're using a charcoal grill, remove grill rack and place an unoiled 12-inch cast-iron skillet directly on warm coals.
  6. (If using a gas grill, turn to high and place skillet on the grill rack.)
  7. Preheat the skillet for 12 min or possibly till any impurity turns to ash.
  8. Add in coated fillets to skillet.
  9. Carefully drizzle about 2 tsp.
  10. of the melted margarine or possibly butter over the fish.
  11. Grill fish for 2 1/2 to 3 min or possibly till blackened.
  12. Turn fish and drizzle with 2 tsp.
  13. of the melted margarine or possibly butter.
  14. Grill for 1 1/2 to 2 min more or possibly till blackened and fish flakes easily when tested with a fork.
