Freedom Cookie Pops

  1. Line baking sheet with parchment paper.
  2. Insert popsicle stick into center of cookie; set aside.
  3. Place white chocolate in heat-proof bowl over pan of simmering water.
  4. Stir continuously until melted.
  5. For ease of dipping, transfer chocolate to deep heat-proof vessel.
  6. Dip cookies in white chocolate and place on parchment-lined baking sheet.
  7. Sprinkle with both sanding sugars and star sprinkles.
  8. Transfer to refrigerator for chocolate to set, about 20 minutes.
  9. Keep chilled until ready to serve.
  10. If you want to take the cute factor up a notch, wrap washi tape around popsicle stick for a decorative finish.
