Double Chocolate Mousse Cake

  1. To make the cake, preheat the oven to 350 degrees F and grease two 9" cake pans.
  2. Beat the eggs, sugar and vanilla until combined.
  3. Add the oil and buttermilk, then add the dry ingredients.
  4. Mix until well combined.
  5. Carefully fold in the boiling water until the batter is smooth and the mixture is quite thin.
  6. Pour into the prepared pans.
  7. Sprinkle with the chocolate chips.
  8. Bake in the preheated oven for 25 to 30 minutes or until a toothpick inserted in the centre of the cake comes out clean.
  9. Cool in the pans for 10 minutes.
  10. Remove from the pans and cool on a wire rack.
  11. To make the mousse, whip the cream in a large bowl until it is thick and holds its shape.
  12. Beat in the icing sugar and vanilla.
  13. Fold in the melted and cooled chocolate chips.
  14. Do not overmix; the mousse should have a rippled effect.
  15. To assemble, place one layer of cake on a serving platter.
  16. Spread with about 1 cup of the mousse.
  17. Place the second layer on top.
  18. Ice with the remaining mousse.
  19. Refrigerate until ready to eat.
