Terry's Choc Orange Cupcakes
- tablespoon butter, for greasing
- 1 1/2 cups sweet biscuit crumbs
- 80g tablespoon butter, extra, melted
- 750g block PHILADELPHIA Cream Cheese, softened
- 3/4 cup caster sugar
- 1/4 cup cream
- grated rind and juice of 1 orange King Sooper's 1 lb For $0.99 thru 02/09
- 2 eggs, lightly beaten
- 1 1/2 tablespoons cornflour
- 2 x 40g bars TERRY'S* Chocolate Orange , chopped
- 1 tablespoon (20g) butter
- Combine the biscuit crumbs and extra butter.
- Press into the lined 12 x 1/2 cup (125mls) capacity non-stick muffin pan and chill until firm.
- Beat the Philly* and sugar in an electric mixer until just combined.
- Beat in the cream, juice, rind and egg.
- Gently stir in the cornflour.
- Pour the mixture into prepared pans and bake at 160C for 15 minutes or until just set.
- Allow to cool.
- Combine chocolate bars and butter over low heat until smooth.
- Drizzle muffins with topping and chill until set.
