Chicken fingers

  1. Melt lard in large pot
  2. Mix Cajun seasoning and garlic powder with the chicken enough to coat all chicken
  3. Dip chicken into flour
  4. Dip into scrambled egg mix
  5. Dip back into flour
  6. Let chicken sit for 5 minutes
  7. Then dip back into flour again
  8. Place chicken into hot grease and fry until crispy golden brown and done
