Zesty Shrimp and Pasta
- 330 g whole wheat linguine, uncooked
- 1/3 cup Kraft Calorie-Wise Zesty Italian Dressing, divided
- 2 cups sliced fresh mushrooms
- 1 small onion, thinly sliced Safeway 3 lb For $2.99 thru 02/09
- 1 can (14 fl oz/398 mL) artichoke hearts, drained, quartered
- 1 lb. (450 g) uncooked large shrimp, peeled, deveined
- 1 Tbsp. chopped fresh parsley
- 1/4 cup Kraft 100% Parmesan Light Grated Cheese
- Cook pasta in large saucepan as directed on package, omitting salt.
- Meanwhile, heat 1/4 cup dressing in large skillet on medium heat.
- Stir in mushrooms, onions and artichokes; cook 3 min.
- or until onions are crisp-tender, stirring occasionally.
- Add shrimp and parsley; stir.
- Cook 2 min.
- or until shrimp turn pink and vegetables are tender, stirring occasionally.
- Drain pasta; return to pan.
- Add shrimp mixture and remaining dressing; toss lightly.
- Sprinkle with cheese.
