Fresh Lemon Dill Salmon with Veggies
- 1/4 cup KRAFT Light Mayo Reduced Fat Mayonnaise
- 3 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1/2 tsp. dill weed
- 1 Tbsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09
- 12 oz. salmon fillet or steak (4 4-oz. salmon steaks)
- 2-1/2 cups instant white rice, uncooked
- 2 cups chopped frozen broccoli
- 2 cups chopped frozen cauliflower Safeway 1 lb For $1.99 thru 02/09
- 1/4 cup PHILADELPHIA Fat Free Cream Cheese
- 3 oz. VELVEETA LIGHT Reduced Fat Pasteurized Prepared Cheese Product
- 32 fl oz (4 cups) drinking water
- Mix mayonnaise, lemon juice, dill weed, and lemon peel.
- Place salmon on broiler pan lightly coated with cooking spray.
- Brush with half of the mayonnaise mixture.
- Broil 2 to 4 inches from heat 5 min.
- Turn over and brush with remaining mayonnaise mixture.
- Broil an additional 2 to 3 min.
- or until fish flakes easily with fork.
- Cook rice as directed on package.
- Layer vegetables, cream cheese, and VELVEETA LIGHT in microwavable bowl; cover.
- Microwave on HIGH 2 min.
- ; rotate dish.
- Microwave an additional 1 min.
- or until thoroughly heated.
- Stir until creamy.
- Divide meal evenly among 4 plates.
- Serve each person an 8 fl oz glass of water with meal.
