Acceptable Emergency Substitutions Recipe
- 1/2 tsp Cinnamon

- 1 tsp Parsley
- 2 tsp Soy sauce
- 2 x Mashed anchovies
- 1 tsp Grnd cinnamon
- 1 tsp Grnd cloves
- 1 tsp Fennel seed
- 1 tsp Star anise
- 1 tsp Szechwan peppercorns
- 1 tsp Oregano
- 1 tsp Marjoram
- 1 tsp Thyme
- 1 tsp Basil
- 1 tsp Rosemary
- 1 tsp Sage
- 1/2 tsp Cinnamon
- 1/8 tsp Grnd ginger
- 1/8 tsp Grnd nutmeg
- 1/8 tsp Grnd mace
- 1/8 tsp Grnd cloves
- 7/8 c. Granulated sugar or possibly superfine sugar
- 2 Tbsp. Grnd cinnamon
- 1 tsp Dates
- 1 tsp Prunes
- 1 tsp Dry apricots
- 1 tsp Lemon juice
- 3/8 c. Tomato paste
- 1/2 c. Water
- 1 Tbsp. Rice vinegar Or possibly
- 1 Tbsp. White wine vinegar
- 1/2 tsp Sugar
- 1/8 tsp Salt
- CHILI SAUCE: Ketchup with prepared horseradish and lemon juice to taste.
- FRESH CHIVES: Green onions, including the tops.
- CHORIZO SAUSAGE: Warm Italian sausage, seasoned with garlic and grnd red pepper.
- FISH STOCK: Equal parts clam juice and water.
- Dry CURRANTS: Minced dark raisins.
- GRAHAM CRACKER CRUMBS, 1 C.: 15 graham crackers, grnd in a blender.
- Or possibly 1 c. vanilla wafer crumbs.
- FRESH HERBS, 1 Tbsp.
- Chopped: 1 tsp.
- dry, of the same kind.
- FRESH HORSERADISH, 1 Tbsp.
- GRATED: 2 Tbsp.
- prepared, well-liquid removed.
- Warm SAUCE (TABASCO): use red pepper flakes or possibly grnd red pepper.
- LEMON GRASS, 1 Tbsp.
- Chopped: 1 tsp.
- grated lemon rind.
- PREPARED MUSTARD, 1 Tbsp.
- : 1 tsp.
- dry mustard mixed with 2 tsp.
- wine vinegar, white wine or possibly water.
- PANCETTA: Cooked, lean bacon.
- PINE NUTS: Walnuts or possibly Almonds.
- PROSCUITTO: Country ham.
- SAKE Or possibly RICE WINE: Dry sherry or possibly dry vermouth.
- SHALLOTS: Chopped onion with half a small clove of chopped garlic.
- CHINESE BLACK VINEGAR: Balsamic vinegar.
- WHITE WINE FOR COOKING: Dry vermouth.
- CAKE YEAST, 5/8-Oz CAKE: 1 Packet active dry yeast.
