Spinach with Soft-Cooked Eggs

  1. Boil the spinach, cut into bite-size lengths, and drain the excess water.
  2. Transfer to a plate.
  3. You could stir-fry with salt and pepper (not listed; a small amount).
  4. Make scrambled eggs in a frying pan, and lay it on the top of the spinach from Step 1.
  5. Combine the sauce ingredients, pour it on top, then you're done!
  6. I stir-fried bean sprouts and eggs, and put it on top.
  7. It has nice crispy texture and is delicious.
  8. I copied "Suirin's" recipe and cooked with komatsuna (Japanese mustard spinach).
  9. (It almost looks the same as the one with spinach.)
  10. I stir-fried komatsuna in oil, removed it from the pan, and scrambled the eggs in the same pan.
  11. I stir-fried bamboo shoots with spinach.
