No-Bake Date Cookies

  1. In a blender add 1 cup of coconut; cover and turn on low speed until chopped.
  2. Empty onto sheet of waxed paper.
  3. Repeat with the remaining cup of coconut; set aside.
  4. Put walnuts in blender, cover and run on low speed until chopped.
  5. Empty into bowl.
  6. Put eggs, sugar and salt in the blender; cover and turn on high speed for 2 minutes.
  7. Add dates; cover and turn on high speed until dates are chopped.
  8. Pour into a large heavy skillet; cook over low heat, stirring constantly, for 10 minutes.
  9. Remove from heat; add Rice Krispies, chopped walnuts and vanilla.
  10. When cool enough to handle, pinch off portions and with dampened hands, form into 1-inch balls. Roll in chopped coconut.
  11. Yields 4 dozen cookies.
