Becca's Apple Blueberry Crisp
- 3 apples, thinly sliced
- 1 cup blueberries
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 2 tablespoons whole wheat pastry flour
- 14 cup soy flour
- 14 cup raisins
- 1 teaspoon cinnamon
- 1 teaspoon grated orange rind
- 14 cup apple juice
- 3 tablespoons honey
- 1 tablespoon canola oil
- Preheat oven to 350.
- Spritz a 9x13 baking dish with nonstick cooking spray.
- Add the apples, blueberries, and lemon juice, and mix well.
- In a large bowl, combine the oats, flours, raisins, cinnamon, orange rind, apple juice, honey and oil.

- Bake for 30 minutes or until the apples are tender.
