Yucuatan Cheviche
- 34 lb shrimp, peeled & deveined
- 34 lb lobster
- 34 lb orange roughy
- 34 lb bay scallop
- 34 lb halibut
- 3 garlic cloves, minced
- 3 red bell peppers, chopped
- 14 cup cilantro, chopped
- 3 habanero peppers, diced
- 3 red onions, diced
- 12 lemons, juiced
- 12 limes, juiced
- prepare all ingredients in a stainless mixing bowl.
- cover with the lemon & lime juice and marinade overnight or up to 24 hours.
- Serve in a large margarita or martini glass with avocado slices & cilantro sprigs for garnish.
- Can be eaten with tortilla chips or in individual margarita or martini glasses as a first course.
