Chilli Mexican Style
- 3 lb chorizo sausage
- 1 large chopped onion
- 3 clove minced garlic
- 1 can 28oz crushed tomatoes
- 2 can 14 1/2 diced Mexican tomatoes
- 2 can 4oz chopped green chillies
- 1 can 15oz pinto beans, drained & rinsed
- 2 can 15oz black beans, drained & rinsed
- 12 oz Corona (any Mexican beer, not light) beer
- 2 jalapeno chopped (opt)
- 1 tbsp Chilli powder
- 1 tbsp cumin
- 2 tsp crushed dried oregano
- 1 tsp crushed dried marjoram
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
- Brown chorizo, onion, garlic in a large saucepan.
- Drain off fat.
- Combine meat mixture with remaining ingredients, over medium heat bring to a boil, reduce heat cover& simmer for 30min
