Tropical Ricotta Fruit Whip
- 1 cup (250) Tre Stelle Traditional Ricotta Cheese
- 1 tbsp. (15) freshly squeezed lime juice
- 1 container (100) banana
- coconut yogurt
- 1/4 cup (50 mL) canned coconut milk (optional)
- 1 ripe banana, peeled and sliced
- 1 mango, peeled and cut into 1/4 cubes
- 1 tsp. (5) lime zest, grated
- 1/4 cup (50) sweetened shredded coconut
- 1 tbsp. sweetened coconut, toasted, for garnish if desired
- Combine Ricotta, lime juice, yogurt, coconut milk, shredded coconut and process in a blender and until smooth.
- Stir in banana slices.
- Refrigerate for one hour or until ready to use.
- Spoon into small serving dishes; top with mango cubes and lime zest.
- Garnish with shredded coconut if desired.
- Makes 2-4 servings
