Tropical Ricotta Fruit Whip

  1. Combine Ricotta, lime juice, yogurt, coconut milk, shredded coconut and process in a blender and until smooth.
  2. Stir in banana slices.
  3. Refrigerate for one hour or until ready to use.
  4. Spoon into small serving dishes; top with mango cubes and lime zest.
  5. Garnish with shredded coconut if desired.
  6. Makes 2-4 servings
