Sweet Potato and Bacon Salad

• 500g sweet potato, peeled and cut into chunks
• 150g rocket leaves
• 5 slices bacon, cut into strips Rite Aid 2 For $7.00 thru 02/06
• 1/3 cup KRAFT* Potato Salad Dressing
• 3 spring onions, sliced

1. Boil, steam or roast sweet potato until tender.
2. Drain and cool slightly.
3. Meanwhile, fry bacon until crisp.
4. Arrange with potatoes and rocket leaves on platter.
5. Drizzle with dressing.
6. Garnish with spring onions.
7. Serve warm or cold.
