Veal Scallopini Marsala Recipe

  1. Mix 1/2 c. flour, 1 tsp.
  2. salt and 1/2 tsp.
  3. pepper.
  4. Dredge veal in flour on one side only.
  5. In heavy skillet, heat 4 Tbsp.
  6. butter over medium heat till it bubbles.
  7. Quickly brown veal, floured side first.
  8. Cook each piece 3 min on each side.
  9. Place browned veal in 150 degree oven to keep hot.
  10. Add in more butter to skillet if necessary, after each veal has been browned.
  11. Pour 3/4 c. of marsala wine and 1/2 c. beef consomme into drippings in skillet.
  12. Simmer 5 min.
  13. Stir constantly.
  14. Add in healthy pinch of oregano and 2 Tbsp.
  15. minced fresh parsley.
  16. Saute/fry 1 lb.
  17. fresh sliced mushrooms in 2 Tbsp.
  18. butter and also add in to sauce.
  19. Arrange veal on serving platter.
  20. Spoon some of sauce over veal.
  21. Serve additional sauce.
  22. Serves 4.
