Vegetable Beef Soup Recipe
- 3 lbs. beef shank, cut in 1 inch pcs
- 6 c. water
- 2 c. tomato juice
- 1/3 c. minced onions
- 1 tbsp. salt
- 2 teaspoon Worcestershire sauce
- 1/4 teaspoon chili pwdr
- 2 bay leaves
- 1 c. celery, diced
- 1 c. sliced carrots
- 1 c. diced potatoes
- 1 c. minced cabbage
- Remove meat from bone.
- Cut in bite size pcs.
- Brown in warm fat.
- Add in bones, water, tomato juice, onion, and seasonings.
- Cover and simmer 2 hrs.
- Add in vegetables; cover.
- Simmer 1 hour longer.
- Remove bones and bay leaves before serving.
- Makes 8 servings.
