Refried Beans

  1. Heat oil.
  2. Saute onion, garlic, carrot and celery, 5 minutes.
  3. Add beans, liquid, zucchini, cumin, chili powder, chipotle sauce and salt.
  4. Bring to a boil and simmer 10-15 minutes.
  5. Add vinegar or lime juice to taste.
  6. Add cheese if desired.
  7. Blend half the mixture.
  8. Mash the other half of the refried beans.
  9. Mix together and reduce to desired consistency.
