Spinach Shrimp Salad With Miso Dressing
- 1/4 cup rice wine vinegar
- 2 tablespoons honey
- 2 tablespoons white miso paste
- 1 tablespoon soy sauce
- 1 1/2 teaspoons white sugar
- salt and ground black pepper to taste
- 1/2 cup canola oil
- 1 teaspoon sesame oil
- 1/2 cup chopped green onions (scallions)
- 3 cups fresh spinach
- 1 (16 ounce) package cooked shrimp
- 1 tablespoon sesame seeds
- Combine vinegar, honey, white miso paste, soy sauce, sugar, salt, and pepper in a blender; blend until smooth. Add canola oil and sesame oil; blend until dressing is emulsified and thick.
- Pour dressing into a large bowl; stir in green onions. Add spinach and toss to coat.
- Transfer spinach to a serving plate. Arrange shrimp on top. Sprinkle sesame seeds over shrimp.
