Southern Country Reuben

  1. Preheat oven to 500F.
  2. Cut block of liver pudding into 8 equal slices.
  3. Place on a baking sheet and bake for 10-15 minutes, or until browned all over.
  4. Meanwhile, toast rye bread and place romaine and onion on bottom slice.
  5. Mix sauce ingredients in a bowl and spread evenly on top slice.
  6. Place two baked slices of liver pudding (while still hot) on top of romaine/onion.
  7. Top with provolone and sauerkraut.
  8. Place sauced slice of rye on top.
  9. Enjoy!
