Fried Rice
- 4 Tbsp. oil
- 1/4 to 1/2 lb. any cooked or raw meat or poultry or 1 can shrimp, rinsed and drained
- 3 cloves garlic, minced
- 1 c. sliced green onions
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. sugar
- 1 Tbsp. soy sauce
- 3 c. cooked rice, chilled
- 1 c. frozen peas and carrots, cooked
- 2 eggs, beaten
- Heat oil in large skillet or wok.
- Add meat (cut in thin strips or small pieces), garlic, onion, salt, pepper, sugar and soy sauce.
- Stir-fry until meat is tender and hot, about 1 to 2 minutes.
- Add rice.
- Stir-fry 5 minutes.
- Add peas and carrots. Stir well into rice-meat mixture.
- Push rice-meat mixture to sides of skillet or wok; add beaten eggs and cook briefly before stirring through rice-meat mixture.
- Continue to stir until eggs are completely cooked.
- Serve immediately.
- Serves 4.
