Baguette Slices With Charred Plum Tomatoes, Basil Pistou And Pecorino Cheese Recipe
- plum tomato Pistou
- 1/2 bn fresh basil, stems removed
- 3 sprg fresh Italian parsley, stems removed
- 2 clv garlic, peeled
- 1/2 c. extra virgin olive oil
- 1 x salt and pepper, to taste
- 1 x fresh baguette, sliced 1/2" thick grated Pecorino cheese
- Grill whole tomatoes till a dark colour is achieved.
- Turn tomatoes oftenremove from grill and trim ends.
- Cut into 1/4" cubes.
- Pistou:In a food processor place basil, parsley and garlic.
- Pulse till minced.
- Add in a little oil and pulse again.
- Turn processor on and pour remaining oil in a stream.
- Season with salt and pepper.
- Combine pistou and tomatoes.
- Spoon tomato mix onto baguette and top with cheese.
- Return to grill & heat through.
