Baguette Slices With Charred Plum Tomatoes, Basil Pistou And Pecorino Cheese Recipe

  1. Grill whole tomatoes till a dark colour is achieved.
  2. Turn tomatoes oftenremove from grill and trim ends.
  3. Cut into 1/4" cubes.
  4. Pistou:In a food processor place basil, parsley and garlic.
  5. Pulse till minced.
  6. Add in a little oil and pulse again.
  7. Turn processor on and pour remaining oil in a stream.
  8. Season with salt and pepper.
  9. Combine pistou and tomatoes.
  10. Spoon tomato mix onto baguette and top with cheese.
  11. Return to grill & heat through.
